Ingredients for the preparation of potato dough "Universal"

  1. Milk (whey or purified water) 300 ml.
  2. Premium wheat flour 400 gr.
  3. Potato medium 3 pcs.
  4. Cream (up to 20% fat content) 20 ml.
  5. Vegetable oil 2 tbsp. spoons
  6. Dry yeast 2 tsp
  7. Sugar 1 tbsp. a spoon
  8. Salt 1.5 tsp

Preparation of potato dough "Universal":

Step 1: Cooking Mashed Potatoes.

Peel the potatoes, after which they are thoroughly washed and cut into 4 parts. Pour enough water into the pan so that it completely covers the potatoes. We put the container on medium heat and bring to a boil. After a little salt, and boil the potatoes until cooked. By time it will take 15-20 minutes. At the end of the heat treatment, the slices of the vegetable should become soft. After draining the liquid from the pan, and turn the pieces into mashed potatoes, gradually adding cream. This can be done using a pusher or a blender. Choose the method that suits you best. Ready mashed potatoes are completely cooled.

Step 2: Cook the potato dough.

We prepare the dough in the sponge method. For this approximately 70% from the total volume of milk, heat in a pan to a temperature 40 degrees. Next, we separate the yeast separately in water, filter them and add to the milk, and add about half of the previously sifted flour. Knead pretty liquid batter from these ingredients. We cover the container with a lid and put it in a warm place for 2.5 hours. During this time, the fermentation process will occur, and the dough will increase significantly in size. In another container, dilute sugar, salt and mashed potatoes in the remaining liquid and add vegetable oil to the mixture. We mix everything, add the remainder of the total volume of flour and knead the dough, which we mix with dough. We again cover the dough with a lid and leave it again for several hours. During this time, the dough is necessary hug a few times.

Step 3: Serve the potato dough "Universal".

The resulting dough is formed into products (rolls, pies, donuts, pies, bread, etc.) and baked in the oven until fully cooked. You can check it with a toothpick: pierce the product with it and if pieces of dough remain on it, then the baking time must be extended, and if the product is easily pierced and the toothpick comes out of it dry, then the dish is ready. - - In order to speed up and facilitate the process of making dough, you can use a bread machine, if any, in your kitchen. In this case, it is necessary to clearly follow the instructions that are attached to such a technique in order to properly prepare a pair of yeast dough.

- - Instead of mashed potatoes, you can use instant potato flakes or instant mashed potatoes.

- - In order for the dough to rise well, it must be stored in a warm place. In this case, you can use several options, for example, keep it near the included oven or wrap it with an old cotton blanket.
