Dessert pancakes with bananas and cherry jam

Beat the eggs with a pinch of salt in a large bowl. Peel a banana, grate it and squeeze the juice. Add a little mineral water, then add to the composition. Add oil (about 2 tablespoons), the rest of the mineral water, then the baking powder mixed in flour (7 tablespoons with a fork), mixing well, with a whisk, to keep the composition aerated.

Heat a little oil (about a teaspoon) in a pan, pour a polish from the composition and prepare the pancakes, browning them on both sides.

Take them out on a plate, leave them to cool, then fill them with cherry jam or you can fill them with milk chocolate while they are hot.

I obtained 8 large pancakes, using a 24 cm pan.
